This colorful 208 page cookbook features a compilation of recipes, ranging from soups/sandwiches to stews, from grilling to salads, from pasta to desserts – all that can be made in your RV.  All servings are for a family of 4.   As well as recipes, “Cooking on Road with Celebrity Chefs” offers a variety of tips from experienced chefs.

From Chef Guy Michaud I tried the recipe for “Eggs and Chorizo Frittata,” a breakfast dish that is sure to please anyone.  It was simple to make and was a hit at breakfast. From Chef Frank Ottomanelli I made the “Low-Carb Chicken Parmesan.”  It was wonderful and we didn’t even miss the coating and frying.  I also tried the “Mediterranean Salmon Skewers” from Chef Charlie Palmer. The salmon tasted sweet, yet there was no sugar in the marinade.  The lemon juice and zest blended very nicely with the fresh oregano.  I’ve never used oregano with salmon before and found it very complimentary.  The final recipe I made for this review was the “Grilled Asparagus.”  I’ve grilled asparagus before, using only oil, salt, and pepper.  This simple recipe asked for balsamic vinegar and parmesan cheese.  This is now my favorite grilled asparagus recipe!

There are many recipes I want to try out from this cookbook.  Some of the marinades sound very good, as so do the desserts. Looking through the book I didn’t see any ingredients that one wouldn’t have or easily obtain.  This is a great cookbook – basically the only cookbook you would need in your RV.   Cooking on the road will never be the same!
