“Enlightened” is an understatement!  Imagine having cake everyday and eating it too! This delightful book gives more than a hundred recipes – the way I figured it out I could bake a cake every four days and never duplicate a recipe.  Although, that said, there are many that could become favorites.

I love Bundt cakes and felt that was a good place to start. They are to be heavy and moist, yet delicate.  The “Citrus-Scented Olive Oil Cake” is surely aimed to please. The hint of coriander added to the lemon undertone is subtle, yet gives it a mysterious tone.

Being a fan of ginger, I found the “Ginger Cupcakes” a delight.  Adding the chopped crystallized ginger gave the added zing one expects. 

Camilla V. Saulsbury’s “Enlightened Cakes” is a keeper!  I appreciated (although I’m not sure I wanted to know!) the nutrition per serving at the bottom of each recipe. The cakes all are less fat and fewer calories than traditional cakes.  The index shows: Old-Fashioned and Feel-Good Favorites; Bundt Bliss; Layer Cakes; Cup Cakes; Cheese Cakes; and, Frostings & Other Extras.
