750 Best Muffin Recipes: Everything from breakfast classics to gluten-free, vegan & coffeehouse favorites
Can you imagine having access to 750 muffin recipes? Being a muffin fan, I was thoroughly delighted to have the opportunity to review “750 Best Muffin Recipes,” but my biggest problem was choosing which ones to test being we have to try three for the purpose of the review. So, I began. My first recipe to test was “Bacon, Corn and Scallion Muffins.” We often think muffins should be sweet or filled with bran but that’s not the case. This recipe, besides the regular “stuff,” calls for corn meal, sour cream, corn kernels, scallions, and crumbled bacon. Oh my, this batch was delicious! (The only thing I would do next time is cut back the sugar; I think the corn itself has enough sweetness.) The second recipe I tested was “Andean Quinoa Muffins.” I’ve never used cooked quinoa in a baked product so was pleasantly surprised at the end result. These are sweet muffins and a little on the heavier side. Delicious with a cup of breakfast tea! (These freeze well too.) The third recipe I tested was “Apple Berry Muffins.” At first glance the recipe looked standard until I noted using non-diary milk and silken tofu. Because of these ingredients I decided to test this muffin recipe. I loved the idea of adding large-flake rolled oats and flax seeds. The apple, blueberries, dried cranberries, and sliced almonds filled the muffin with delicious surprises. A little on the sweet side, these muffins were quickly devoured by the neighbors. They love it when I test recipes for reviews. Yes, I have an option of test out 747 more recipes! I must say, “750 Best Muffin Recipes” can be a little overwhelming but, nevertheless, a highly recommended cookbook. Perusing many of the recipes I’m noting that they are simple and the ingredients can be found in pantries or local grocery stores. Muffin fans: I highly recommend “750 Best Muffin Recipes!” |
