I love these little books that Barbour Publishing creates!  They are small, have superb recipes and make wonderful hostess gifts or stocking stuffers for those that love to cook.  This particular one, “25-Minutes Meals,” is perfect for busy people or college students that have their own apartment for the first time.

For the purpose of a review we are asked to test three recipes.  The first one I chose was “Jojo's Turkey Stomboli.” Using a tube of refrigerated pizza crust and the normal additions of turkey breast slices, turkey pepperoni and mozzarella cheese I had a wonderful dinner dish.  Combined with a side salad we were very full and smiling.  This is a good one!

The second recipe I tested was “Mushroom Chicken Skillet.”  Using frozen veggie mix, fresh mushrooms, cubed chicken and spices make the recipe simple and very tasty.  Suggestion is to serve it over rice or pasta - I used pasta.  Very good, and the best part the creation of it took very little time.

The third recipe I tested was “Cheesy Spinach Meat Loaf.”  The addition of spinach was different from the usual meatloaf recipe, and as the title says “cheesy” it means there is a lot of cheese in it.  This recipe was quick and easy as well and cooking time was only about 13 minutes in the microwave.

There are many recipes in “25-Minutes Meals” that I’m going to try out.  I specifically like the simplicity of the recipes and from what I can see the ingredients are those that can be found in any pantry and certainly at your local grocery story.  Nothing fancy; just simple, down-home cooking type of recipes.
