I was excited to get this gem to review because I was getting tired of having to always plan what we are going to eat each day.  The concept of freezing meals is almost foreign these days but I certainly see the need as most of us are getting busier and meal preparation sometimes becomes a chore. I can attest that “Quick and Easy Freezable Meals” is the answer to our prayers!

Breakfast is always an issue for me so I decided for the first recipe that’s the direction I would go into.  I chose “Sausage Muffins.”  What a great concept!  Eggs and breakfast sausage all contained in one muffin.  Microwave for 90 seconds and you have a warm breakfast, quick and easy - and, very delicious as well.

My second recipe was “Tex-Mex Roll-Ups,” a combination of refried beans, salsa, kidney beans, and cheese wrapped up in a corn tortilla and frozen.  Thirty seconds in the microwave and you have an instant lunch that is high in protein and double-delicious.

The final recipe I tried is “King Ranch Chicken Casserole” which was extremely tasty and easy to make. The recipe is large and fits into a 9 x 13-inch baking dish.  I ended up dividing it between two smaller baking dishes. The dish freezes well uncooked and the thawing process and baking is simple.

I’m looking forward to making more recipes from “Quick and Easy Freezable Meals” very soon.  I like the concept and it certainly eases the stress of cooking every day. The compilation by MariLee Parrish is very mindful of the busy cook.
