The Best 30-Minute Vegetarian Recipes
Those of us that have busy schedules but want to have a nutritious meal for our family, will find “The Best 30-Minute Vegetarian Recipes” an inspiration when time is limited. For the purpose of the review we are asked to test three recipes. The first recipe I tested was “Hint of Orange Salad.” The combination of arugula, endive, avocado, orange, black olives, cucumber and sesame seeds, was unique in itself. The dressing was interesting as well; lemon juice, tahini, white wine vinegar, tamari, sesame oil and ground ginger was a combination I’ve never used before. The salad was very good and combined with a crusty roll it made a great lunch. The second recipe I tested was “Three-Bean Omelet.” This protein-filled omelet was delicious! It was filled with black beans, chickpeas, and red kidney beans combined with garlic, red bell pepper and Spanish onion. Before testing this recipe I had never considered using beans for an omelet so the final product was a pleasant surprise. The third recipe I tested was “Stuffed Peppers.” The stuffing for the red bell peppers included garlic, red onion, plum tomatoes, lentils and goat cheese. Twenty minutes in the oven and you have a quick meal. The stuffing was good but a little too dry for my liking. I will make this recipe again but will use a creamier cheese than the Gouda I used. As I perused the remaining recipes in “The Best 30-Minute Vegetarian Recipes,” I noted some classics but many of the recipes were new and interesting combinations. The ingredients can be found in any pantry or local grocery store. “The Best 30-Minute Vegetarian Recipes” is a good recipe book and I recommend it, not only for vegetarians but for those that choose to have a meatless meal. I believe you won’t be disappointed. |
