300 Best Potato Recipes: A Complete Cook’s Guide
I don’t know of anyone that doesn’t like potatoes in some form or another. I knew potatoes are a staple in many countries around the world but I had no idea there were more than 4000 varieties (International Potato Center, Peru) although there are only between 400 and 500 in active production. For the purpose of the review we are asked to test three recipes. The first recipe I tested was “Burgermeister Potatoes.” I remember my mother making something similar to this when I was a child and I wanted to replicate it. Aside from the ground nutmeg, they were very similar and quite tasty. It is certainly a good way to use up left over mashed potatoes. I will be making this recipe again. The second recipe I tested was “Baby Potatoes with Salsa Verde.” The reason I wanted to test this recipe is because the salsa sounded extremely interesting. Using parsley, basil green olives, garlic, and capers was different enough for the salsa but adding a thick slice of bread attracted my attention. All the ingredients for the salsa were turned into paste and tossed with the potatoes. Delicious! The third recipe I tested was “Sautéed Fingerlings with Asparagus & Mint.” After parboiling the potatoes they are cooked in a skillet with the asparagus until both are golden brown. Add salt and pepper and a bunch of mint and you have a wonderful dish that goes great with lamb. I love this combination. As I browsed through “300 Best Potato Recipes,” I found other recipes I will be making. Growing up, potatoes were served on a daily basis in my home so looking through the cookbook I reflected on the various ways my mother prepared the vegetable. It reminded of going back to basics and if you are so inclined, this cookbook would certainly guide you. |
