People either hate casseroles or love them.  Our family happens to be one that loves them so when “300 Best Casserole Recipes” came in for review I was delighted.  Like most busy people, I love to “throw” all the ingredients into a baking dish and within an hour or so have the home smelling of a home cooked meal and the meal ready to be devoured.

For the purpose of this review we are asked to test out three recipes.  My first test was “Brunswick-Style Chicken Pot Pie.”  I’ve never tasted a Brunswick stew before so using stewed tomatoes and baby lima beans in a pot pie was new to me.  The rest of the ingredients were the regular chicken, onions, chicken broth, corn, and thyme.  Topped with refrigerated biscuits, this recipe made a different and wonderful meal.  Combined with a side salad we thoroughly enjoyed this pot pie. 

The second recipe I tested was “Cherry Pecan Breakfast Casserole.”  This reminded me of a breakfast casserole I used to make for Christmas morning but with a sweet flare. Adding cream cheese, dried cherries and pecans gave this rich (half-and-half cream and eggs) casserole a wonderful substitute.  I will be making it again for this coming Christmas morning.  (This recipe is made the day before and left in the refrigerator overnight.)

The third recipe I tested was “Harvest Lasagna with Infused Sage White Sauce.”  Even just the name of the recipe makes the traditional type of lasagna seem insignificant. The white sauce is robust with flavor of fresh sage and hint of bay leaf.  The filling is a combination of Portobello mushrooms, sweet potatoes, onion, garlic, baby spinach and Swiss and Parmesan cheese.  Although this recipe takes a little more time than some of the other casserole recipes, it was well worth the time and effort.  I loved the addition of sweet potatoes, giving the lasagna a sweetness that is unusual.  Yes, this recipe is rich but accompanied with a side salad you have a meal that your company will talk about for a long time. 

Tiffany Collins’ compilation of recipes is truly a delight to enjoy.  As I perused the rest of the recipes I felt most were very simple and took very little time to prepare.  As well, the ingredients are simple and can be found either in the kitchen pantry or local grocery story.  For me, “300 Best Casserole Recipes” is a keeper and I’ll be making a few more dishes from this book within a very short time.
